Spot Prawn Ceviche

Ingredients:

2 lbs peeled and cut Wild Spot Prawns

1/2 red onion diced

1/2 container of cherry tomatoes cut into 1/4s

1 jalapeno diced

1/2 bunch of cilantro

3/4 cup of lime juice, plus extra for fresh squeezing on top

Garlic salt to taste (more than you think you would need)

Directions:

1. Peel and cut the prawns, then put in a bowl

2. Add 3/4 cup of Lime juice to prawns, set aside and let marinade for about 30-45 mins

3. Dice onion, tomatoes, jalapeno, and cilantro

4. Add to a bowl and salt to taste

5. After prawns have marinated until they look "cooked", drain off the lime juice (flesh will have an opaque look)

6. Combine all ingredients in a big bowl, add a squeeze of fresh lime and salt again to taste

7. Enjoy on a tostada or with tortilla chips
